Bacalao - saltfish, fig and dumplings

This dish is a favorite in my home country Grenada. It's very delicious and comforting. 






1&1/2 cups shredded (chopped) cabbage
 1/2 a red bell pepper
1/2 of a yellow bell pepper
1/2 of a green bell pepper 
1/2 a cup oil (coconut preferabally)
1 whole  onion cut into rings
2 sprigs scallions
1 tomato (squeeze out the excess juice)       And thinly sliced. 
2 packs bacalao/ saltfish

1)Boil the saltfish (baccalao)in a pot of water for about 4 mins
2) throw out the water from the pot with the saltfish and add fresh new water, then put back to boil again. ( doing this lessens the saltiness of the fish. 
3) after three mins of boiling throw away the water. 
4) in a frying pan add the oil , over medium-high heat. (Using coconut oil gives this dish an even greater flavor but other oil works perfectly fine). 
5) next add the onion, scallion, cabbage, and the red, green and yellow pepper to the pot with oil. Stir then Let cook for abt 3-4 mins. At this point lower the heat to medium. 



6) add the tomato and saltfish (bacalao) to the pot. use your pot spoon to break up the saltfish into small pieces. 

7)Stir mix ing everything together then cover let simmer over low heat 
For abt 5-6 mins.
 
Then serve with some dumplings, and green bananas and yellow plantains. Some people serve it with rice but I prefer my dumplings.  Yummmmmm :-).
