Homemade chicken burrito bowl



If you love going to chipotles you'll love creating this dish!


Chicken burrito bowl

Here is the recipe: there are four parts to putting together this dish. I was watching Melissa D'arabian on the foodnetwork channel and she was making burrito bowls. I decided to make it adding a few of my creation to it. Here it goes :-):

Pico de Gallo: 
1 onion diced
1 jalepeno pepper diced ( throw away the core & seeds unless you love the heat.) 
1 tomato diced (also throw away the core)
1/2 of an  avocado diced
1/2of a lime
Salt
1tsp sugar
 
In a bowl combine all ingredients together. Be sure to squeeze the lime. It preserves the color of the avocado. After squeezing the lime add the sugar and a pinch of salt. 
Cover and put in the refrigerator until time to serve. 

Next step. Rice: 
-cook one cup of white rice. According to package. Or your original way. 
- After its finished. Add 1 tsp orange zest, 1tsp finely chopped parsley and 1 tsp finely chopped basil to rice. Mix and set aside. (If you're using dried basil and parsley I'll suggest adding it while the rice is cooking). 

Next is the beans: 
- You will need one can black beans.  
 And about a teaspoon of each: basil, oregano, parsley, and thyme. 
- Add the entire contents of the canned beans to the pot. 
-Then add herbs. Add a little bit of water to the can. Shake it and add to pot. 
Let everything simmer 4-5 minutes 
Add a pinch of salt. 

Chicken time:
Chicken (or meat of your choice):
2 chicken breast sliced to make 4. 
- marinate chicken for at least 30 minutes with: 1/2 an onion chopped, oregano, basil, thyme, salt, black pepper, and any of your favorite herbs & spices. 

- in a frying pan over medium heat,  add 3 tbsp oil. (You can add more if needed). 
- add chicken to pot and let cook stir occasionally so it doesn't burn on one side. 
-  add one teaspoon of thyme to the pot. Taste to see if you need more salt. 
- after about ten minutes, (if there is any excess liquid in the pot throw some away before continuing) squeeze one orange over chicken. 
- stir and let cook for about 10-15 more minutes. Until chicken starts getting a little  golden brown on one side. 

Now it's time to create your bowl or your burrito. 
* if you would rather a burrito you can buy flour tortilla from the grocery store. Then add all ingredients on top of tortilla, roll and wrap to make a burrito. 

To make your bowl:
You will need: pico de gallo
Shredded white cheddar/mozzarella cheese
Cooked Chicken mixture
Corn mixture 
Black beans
Lettuce
Rice
 simply start of by adding your desired amount of rice to a bowl then pico de gallo, black beans, corn, chicken, some shredded cheddar cheese, and shredded lettuce on top. Mix a little and enjoy!

Orange shrimp and vegetable curried rice


So I made this for dinner the other night and it turned out great! It was sooo tasteful and delicious. Sautéed shrimp in a buttery orange sauce with vegetable curry rice bathe rice itself is so delicious  I ate some of it the next day with some sauce from the shrimp. Recipe will be posted tomorrow. :-)

Bacalao - saltfish, fig and dumplings

This dish is a favorite in my home country Grenada. It's very delicious and comforting. 






1&1/2 cups shredded (chopped) cabbage
 1/2 a red bell pepper
1/2 of a yellow bell pepper
1/2 of a green bell pepper 
1/2 a cup oil (coconut preferabally)
1 whole  onion cut into rings
2 sprigs scallions
1 tomato (squeeze out the excess juice)       And thinly sliced. 
2 packs bacalao/ saltfish

1)Boil the saltfish (baccalao)in a pot of water for about 4 mins
2) throw out the water from the pot with the saltfish and add fresh new water, then put back to boil again. ( doing this lessens the saltiness of the fish. 
3) after three mins of boiling throw away the water. 
4) in a frying pan add the oil , over medium-high heat. (Using coconut oil gives this dish an even greater flavor but other oil works perfectly fine). 
5) next add the onion, scallion, cabbage, and the red, green and yellow pepper to the pot with oil. Stir then Let cook for abt 3-4 mins. At this point lower the heat to medium. 



6) add the tomato and saltfish (bacalao) to the pot. use your pot spoon to break up the saltfish into small pieces. 

7)Stir mix ing everything together then cover let simmer over low heat 
For abt 5-6 mins.
 
Then serve with some dumplings, and green bananas and yellow plantains. Some people serve it with rice but I prefer my dumplings.  Yummmmmm :-).

Secure you !

As soon as you fall down, the people you were ALWAYS there for let you go. Drop you. Think the worst of you. Judge you! Think they're now  better than you. They cant support you the way you did them. They leave you in your pain! Hurt you. And throw dirt on you! So before you fall again create a life where youre always secure! Where you need NOBODY! and create a life that when you're down, no one but you can tell! Not everybody deserves someone like you in their life!  Some just dont know how good you are to them  until they have you no more!  That's Why 'death' is so painful! A kind-hearted person is rare in this world.  Some take for granted people and time. we need to celebrate them while theyre here! Most of the time u really can't find better out there! Everyone these days when you first meet them is wearing a mask! When they get comfy the mask comes off!

Macaroni pie and carrot rice.

I made this today for a party at my niece and nephew's school. The pie was finished before the party even started! It's that good :-)


This is carrot rice. The flavor of this rice is so good! Delicious!
